Belshaw's Mark 6 is the leading midsize donut production system. Compared with open kettle frying, Mark 6 makes donut production faster and easier with dramatically reduced labor costs. Less training is required to work the system efficiently, and more consistent quality is attainable. The system runs with much reduced strain and effort, and the operator does not need to stand in front of the fryer for prolonged periods. In addition, you can reduce shortening consumption by up to 50%, compared to kettle frying. The Mark 6 system typically produces about 90 dozen yeast-raised donuts per hour.
